Found cooked carnitas on storage shelves 5lbs at 64.0 F and menudo chili sauce 4 gallons 113.0 F. Instructed manager that potentially hazardous foods must maintain 40 F or below or 140 F or above. Must properly document temperature log and cool potentially hazardous foods from 140 F to 70 F within 4 hours and 70 F to 40 F within 2 hours. Critical citation issued 7-38-005(A). Value $75.
