POTENTIALLY HAZARDOUS FOOD MEETS TEMPERATURE REQUIREMENT DURING STORAGE, PREPARATION DISPLAY AND SERVICE - Comments: Found potentially hazardous foods in the two door tall cooler in the kitchen at improper temperatures: 2lbs of crawfish at 50.4f, 3lbs of heavy whipping cream at 48.1f, 5lbs of beef at 52.0f, 1.5lbs of cooked onion and fennel at 56.0f, 3.5lbs of fish at 51.7f, 0.5lb of calamari at 49.2f, 2lbs of shrimp at 46.2f, and 0.5lb of milk at 45.9f. Operator discarded and denatured said foods, valued at $200. Instructed to maintain all potentially hazardous foods at 40f or below or 140f or above. Critical violation 7-38-005(a).
