INSTRUCTED TO INSTALL WALLS FROM FLOOR TO CEILING ALL AROUND THAT ARE DURABLE, SMOOTH, NONABSORBENT AND EASILY CLEANABLE SURFACE. During non-operating hours and periods of inclement weather, the food preparation equipment, including equipment used for dispensing, shall be protected from contamination in a method approved by CDPH.
