THE COLD HOLDING UNIT MAINTAINED A TEMP OF 40F OR LOWER AT TIME OF INSPECTION AND THE HOT-HOLDING UNIT WAS SET ON LOW PRIOR TO INSPECTION, AFTER TURNING UP THE TEMPERATURE, 170F WAS VERIFIED BY END OF INSPECTION.
