SANITIZING RINSE FOR EQUIPMENT AND UTENSILS: CLEAN, PROPER TEMPERATURE, CONCENTRATION, EXPOSURE TIME - Comments: FOUND NO SANITIZER SOLUTION IN THE SANITIZING COMPARTMENT OF THE 3-COMPARTMENT SINK WITH TRAYS IN THE ABOVE MENTIONED COMPARTMENT THAT WERE WASHED AND RINSED PRIOR TO BEING PLACED IN SINK. THERE WAS A MISCOMMUNICATION WITH STAFF ON WHO PUT SANITIZER IN THE SINK, RESULTING IN NEITHER EMPLOYEE PUTTING SANITIZER IN THE SANITIZER SINK. SANITIZING CONCENTRATION WAS 0 PPM QUATERNANRY AMMONIA. INSTRUCTED TO PROPERLY WASH, RINSE, AND SANITIZE (200-300PPM QUAT) AT ALL TIMES. CRITICAL VIOLATION, NO CITATION ISSUED
