THE WASH TEMPERATURE WAS 160F AT TIME OF INSPECTION BUT THE FINAL RINSE GAUGE DID NOT REACH A TEMPERATURE ABOVE 100F. THE MACHINE WAS TAGGED AND CANNOT BE USED UNTIL REINPSECTED BY CDPH AFTER THE UNIT HAS BEEN REPAIRED. INSTRUCTED TO USE THE 3-COMPARTMENT SINK TO WASH, RINSE, AND SANITIZE ALL EQUIPMENT AND UTENSILS.
