HANDS WASHED AND CLEANED, GOOD HYGIENIC PRACTICES; NO BARE HAND CONTACT WITH READY-TO-EAT FOODS. - Comments: Observed poor hygienic practices: observed a food handler rinse hands in water at the three compartment sink then wipe then on a wash cloth. Also observed a food handler touch ready to eat food items (already heated sandwiches and lettuce for sandwiches) with bare hands. Instructed facility that all hand washing must be done at a hand washing sink with soap and by following hand washing guidelines and that there is to be no bare hand contact with ready to eat foods (ie. use gloves, utensils, etc). Facility complied. Critical violation 7-38-010(a).
